For a paper-filter starting point, use 20 g of coffee to 330 g of water at approximately 94–96°C. Saturate the grounds evenly and pour steadily. If the cup is thin or sharply sour, try a slightly finer grind while keeping the dose and water amount constant; stop when sweetness and clarity improve.
