GABEE Colombia Organic Full City Coffee is one of the roaster's darkest offerings, developed to deliver a bold cup without erasing the character of Colombian specialty coffee. The medium-dark Full City roast emphasizes dark chocolate, sweetness and nuttiness with a full body and balanced finish. Its increased solubility makes it forgiving across espresso, drip and cold-brew preparation, while the washed process helps the cup retain structure beneath the deeper roast development.

The coffee comes from the Herrera and Bilbao areas of Tolima, Colombia, at documented elevations of 1,700 to 1,900 meters above sea level. What to expect in the cup

The first impression should be a substantial body and dark-chocolate depth, followed by a rounded sweetness and nut-like finish. Full City roast development reduces the prominence of bright acidity while preserving enough structure to keep the cup from feeling flat. Brewing and extraction guidance

A coarse, uniform grind and thorough filtration will preserve more clarity than extending steep time indefinitely.

Freshness, degassing and dialing in

Allow the coffee to degas before final espresso dialing, particularly if it arrives very fresh. Keep the bag sealed in a cool, dry place and grind immediately before brewing. As the coffee ages, shots may run faster; compensate with small grind changes rather than a large dose increase. Recording dose, yield and time makes those adjustments more precise and reduces waste.

Choose the right format
