What Is Astringency in Coffee? Drying Mouthfeel, Causes & Sensory Evaluation
Astringency is a drying, puckering or rough tactile sensation in the mouth. It is not one of the basic tastes and it is not the same thing as bitterness, even though the two often appear together in poorly balanced coffee.
If a coffee makes the tongue feel dry, the cheeks tighten, or the finish feels like strong black tea or underripe fruit, that sensation is likely astringency.

This distinction is useful because each problem may require a different brewing change.
What causes the drying sensation?
Astringency is associated with polyphenolic and other compounds interacting with proteins in saliva, reducing lubrication and creating a dry tactile impression. Coffee naturally contains compounds capable of producing astringency; the question is how much enters the cup and how it is balanced by sweetness, acidity and body.
Uneven extraction is a common culprit
A brew can have an average extraction that looks reasonable while individual regions of the coffee bed are badly over- and under-extracted. Water moving preferentially through channels can strip some areas aggressively while bypassing others. This is especially relevant in espresso.
In filter brewing, excessive fines migration can clog parts of the filter, creating uneven flow and extended contact in localized areas. Heavy agitation can worsen that behavior with some grinders and brewers.
Does over-extraction always mean astringency?
No. The old rule “over-extracted equals bitter and dry” is too simple. A well-extracted coffee can reach relatively high extraction yields and still taste sweet and clean. Astringency often points more strongly toward uneven extraction, excessive fines, undesirable green-coffee character or roast issues than toward a single extraction number.
Green coffee and roasting can contribute
Immature coffee, certain processing defects, excessive roast damage or underdeveloped interiors can create harsh, woody, drying or vegetal impressions that brewing adjustments cannot completely remove. If astringency persists across multiple grinders and recipes, the coffee itself may be contributing.
How to evaluate astringency
Pay attention after swallowing. Bitterness is tasted immediately, while astringency often becomes most obvious as the mouth dries several seconds later. Cuppers may note whether the drying sensation is localized to the tongue, gums or cheeks and whether it increases as the cup cools.
Can water chemistry change it?
Yes. Water hardness and alkalinity affect extraction and flavor balance. High alkalinity can mute acidity and make bitterness or dryness more dominant; very low-mineral water can produce weak, uneven extraction. Water should be evaluated as part of the whole brewing system rather than treated as a universal cause.
