Water TDS for Coffee and Espresso: What the Number Means—and What It Cannot Tell You

Water TDS is an estimate of the total concentration of dissolved material in brewing water, usually expressed in parts per million (ppm) or milligrams per liter. It can be a useful screening number, but it does not tell you which minerals are present.

How a TDS meter works

Most handheld TDS meters do not directly weigh dissolved solids. They measure electrical conductivity and convert that reading to an estimated TDS using a factor programmed into the meter. Because different ions conduct electricity differently, the number is an approximation.

Why the composition matters

Two water samples can both read 100 ppm TDS while behaving very differently in coffee equipment and in the cup. One might contain mostly calcium and bicarbonate; another might contain more sodium and chloride. Those waters can have different alkalinity, extraction behavior, scale potential, and corrosion risk.

Water TDS is not coffee-beverage TDS

Baristas also use the term TDS for brewed coffee strength measured with a refractometer. That is a different measurement. Brewing-water TDS describes the water before brewing; beverage TDS describes the concentration of dissolved coffee material after brewing.

Use TDS as a clue, not a complete water test

A sudden TDS change can help identify a failing RO membrane, blending adjustment, or source-water shift. But equipment protection decisions should also use hardness, alkalinity, and other relevant chemistry.
