Siphon Coffee Brewers: Vacuum Brewing, Heat, Agitation, Filters, and Technique
A siphon brewer—also called a vacuum brewer—uses vapor pressure to move hot water into an upper brewing chamber and a cooling-induced vacuum to draw brewed coffee back through a filter. The method is visually dramatic, but the underlying brewing variables are familiar: ratio, grind size, water temperature, contact time, agitation, and filtration.
How a siphon works
Water begins in the lower globe. As it heats, expanding vapor pressure pushes water up a tube into the upper chamber. Coffee is added and allowed to brew. When heat is removed, the lower chamber cools and its internal pressure falls, drawing the beverage back through the filter while the grounds remain above.
Immersion with a filtered drawdown
Most extraction occurs while the grounds and water are together in the upper chamber, so siphon brewing behaves largely like immersion. The final drawdown through cloth, paper, metal, or other filters changes body and clarity.
Variables that matter
- Grind: commonly medium to medium-fine, adjusted to brew time and filter resistance.
- Heat: enough to maintain stable brewing without violently boiling the slurry.
- Agitation: stirring affects saturation and extraction but excessive agitation can increase fines migration.
- Filter: cloth often gives a rich but clean cup; paper can increase clarity; metal allows more oils and fines.
Why drawdown speed changes
A very slow drawdown can result from excessive fines, a clogged cloth filter, overly fine grinding, or heavy agitation. A very fast drawdown may indicate a coarse grind or a poor seal between chambers.
Cleaning matters
Cloth filters need especially careful rinsing and storage because retained coffee oils can become rancid. Glass chambers should be handled gently and allowed to cool safely.
