Pouring Height in Pour-Over Coffee
Pouring height is the vertical distance between the kettle spout and the coffee slurry during manual brewing. It changes how much energy the water stream carries into the bed and therefore influences agitation, mixing, and fines movement.
Low pours are generally gentler
Holding the spout relatively close to the slurry usually produces a more coherent stream with less impact energy. This is useful when you want controlled water placement and minimal bed disturbance, especially with coffees or grinders that generate many fines.
Raising the kettle increases energy—up to a point
A higher stream accelerates before it reaches the slurry and can penetrate more deeply, increasing agitation. But once the stream breaks into droplets, additional height no longer acts like one coherent jet. Excess height can also make pouring less precise and splash grounds onto the filter wall.
Height works with pour rate
A high, fast pour is much more energetic than a low, slow one. Pour rate, spout geometry, stream thickness, brewer shape, and slurry depth all interact. That is why two baristas holding kettles at the same height can still create very different agitation.
Practical use
- Use a low, controlled stream when drawdown is already slow or the coffee is prone to fines migration.
- Use somewhat more height when you need additional mixing or want to disturb a crust gently.
- Avoid repeatedly striking the paper wall, which can promote bypass and uneven bed movement.
Consistency matters more than finding one perfect number. Once a recipe tastes good, keep kettle height and pour rate repeatable before changing grind or other variables.
