Nuova Simonelli Installation Guide: Power, Water, Drain and Counter Planning
A commercial espresso machine should be selected together with its installation site. Voltage, amperage, water chemistry, line pressure, filtration, drainage, counter construction, grinder space, and service access can all change between models and configurations. Planning from a family name or a photo is not enough.
This checklist is written for Nuova Simonelli machines, but the central rule applies to every commercial installation: use the exact current specification sheet for the exact group count and options being purchased.

Electrical planning
Confirm the exact voltage, operating range, wattage, amp draw, and connection before the electrician begins. One-group and compact models may have different requirements from full-size two- and three-group machines. Options within the same family can also change electrical demand.
Use a dedicated circuit sized and installed by a qualified electrician. The receptacle must remain accessible without placing cords near hot surfaces, water, or sharp cabinet edges. Do not purchase an adapter as a substitute for the specified circuit.
Water quality and filtration
Water affects extraction, scale formation, corrosion, valves, boilers, flowmeters, and warranty compliance. Test the actual incoming water for hardness, alkalinity, total dissolved solids, chlorine, pH, and any locally relevant contaminants. Then select treatment for both the water analysis and expected daily use.
Manufacturer requirements can differ by model. For example, current Simonelli documentation for certain Aurelia Wave configurations specifies a narrow hardness target along with limits for TDS, alkalinity, chlorine, pH, line pressure, and flow. Treat those figures as model-specific requirements—not a universal recipe for every Nuova Simonelli machine.
A cartridge also needs capacity planning. Record installation date, tested water conditions, rated capacity, actual usage, and replacement schedule. A filter left in service beyond capacity provides false reassurance.
Water line and shutoff
Plumbed machines generally require a dedicated treated cold-water supply with an accessible shutoff. Confirm connection size, permitted line material, line pressure, and minimum flow with the exact specification sheet. Place filtration where cartridges can be changed without moving the machine or dismantling cabinetry.
Drainage
A commercial drip tray normally drains by gravity, so slope and routing matter. Avoid long flat runs, uphill sections, tight kinks, and cabinets that pinch the hose. Plan an appropriate drain connection and air gap according to local code. Leave enough access to remove and clean the tray and to inspect the line.
The reservoir version of the Musica is the main exception in this collection: it avoids a permanent water connection, but the user must refill the tank and manually empty the drip tray. The direct-connect Musica requires a fixed water and drain plan.
Counter and bar layout
Allow room for the machine, one or two grinders, knock box, tamping area, scales, pitchers, rinser, cups, water treatment, and routine cleaning. Check overhead clearance with hoppers and cups in place. Do not block panels that a technician must remove.
The grinder can determine whether the machine reaches its practical capacity. A fast multi-group machine paired with an undersized grinder still produces a slow bar. Plan a second grinder when decaf or another espresso is part of the menu.
