How Large Should a Mobile Coffee Cart Wastewater Tank Be?

A full wastewater tank can stop a coffee event even when there is plenty of fresh water left. That is why waste capacity deserves its own calculation and operating plan.
Start with the applicable local tank requirement, then check the actual liquid entering the waste system. Include the espresso machine, sinks, rinser, treatment equipment if relevant, and any other approved drain connection. Also account for liquid brought onto the cart as ingredients or ice.
Check the required relationship to fresh-water capacity
Some jurisdictions specify a minimum wastewater capacity relative to the water supply tank. Washington's mobile-food-unit rule requires at least 15% more capacity in the wastewater retention tank. Washington WAC 246-215-09135
For a Washington-only arithmetic example, a 30-U.S.-gallon water supply tank produces a minimum relationship of 30 × 1.15 = 34.5 U.S. gallons of wastewater capacity. That is not a national rule, a complete cart design, or proof that those capacities suit the event.
Ask the reviewer how the requirement applies to the actual system, including multiple tanks or other supply arrangements. Do not substitute a different capacity calculation because a smaller tank fits the cabinet more conveniently.
Follow the liquid, not only the fresh-water meter
Some supplied water leaves in the customer's drink. Some remains temporarily in equipment. Other liquid reaches the drain from milk, remade drinks, or melting ice that did not come from the fresh tank.
This invented water-balance example illustrates the distinction:

The example assumes no other retained water or unlisted flow and is only an accounting demonstration. Measure your own system. Do not use the 16-gallon result to override a local minimum based on installed supply capacity.
Check for double counting. If discarded drinks already appear in a measured sink total, do not add them again as a separate estimate. Identify which observation captures each flow.
A fresh-water refill changes the operating picture
A cart may carry a compliant pair of tanks yet produce more wastewater during an event than its waste tank can hold if the fresh tank is repeatedly refilled.
Plan the interval between approved waste-disposal opportunities as well as the interval between fresh-water fills. If the cart cannot leave its pitch during service, the waste arrangement must support that condition or the booking needs another approved solution.
Do not assume that a nearby sink, outdoor grate, or landscaping area is an acceptable disposal point. Arrange the approved method with the venue, commissary, and relevant authority before the event.
Choose a tank that fits the operating layout
Check dimensions, connections, cleaning access, secure mounting, and the approved method for checking levels. Leave access with the refrigerator, pump, and other equipment in their final positions.
A nominal tank rating does not answer every installation question. Ask the designer about usable operating capacity, required free space, venting, connection locations, and how the selected tank will be emptied and cleaned. Those details belong in the approved plumbing design.
Avoid arranging hoses so staff must pull them out and reconnect them casually to reach storage. Drain connections should remain secure and serviceable, with the separation and routing required by the equipment and local rules.
Keep gravity drainage workable
The espresso machine's tray, a pitcher rinser, and sinks may discharge differently. Have the plumber account for the complete route to the tank, including slope, fittings, potential restrictions, and required air gaps or other protections.

Make level checks part of service
Give one person responsibility for checking and recording the waste level at useful points during the event. Use a reliable method appropriate to the installed tank; guessing from how many coffees have sold is not enough.
Set an action point before the tank is full. Staff need time to arrange the approved disposal process or pause the affected operation. Keep the response clear if a sensor fails or the level cannot be confirmed.
Plan emptying without contaminating the clean side
Keep wastewater handling equipment identified and separate from clean-water filling equipment. Follow the approved disposal and cleaning procedure, including how hoses and connections are protected afterward.
Have the builder account for the weight and movement of the loaded system. A full tank should not depend on a shelf or restraint arrangement selected only for its empty weight.
At the rehearsal, have the actual event operator perform the disposal routine. Check access, handling, time, and cleanup. If it requires reaching past electrical equipment or moving heavy components awkwardly, correct the layout before the first paid event.
Revisit capacity when the menu changes
Adding a rinser, serving more iced drinks, extending hours, or changing the cleaning method can alter wastewater production. Keep event records and review the assumptions before changing the service offer.
The useful outcome is a locally approved capacity and a routine that gets through the whole job. That includes setup, service, cleaning, and disposal—not just the time the machine is making drinks.
