Grind-by-Time vs. Grind-by-Weight Commercial Grinders

A timed grinder stops after a selected duration. A grind-by-weight grinder uses a weighing system to control the dose toward a selected mass. Both can be part of a good café espresso program when staff understand the system and maintain the recipe.
The buying question is whether weight-based control removes enough correction and handling to be worth the additional cost for your operation. It doesn't replace espresso dial-in or make every weighing step unnecessary.
What the timer controls
On a timed grinder, you program a duration, grind a dose, and check the mass delivered. Adjust the duration until the output supports the recipe.
The relationship between time and mass can change with the coffee, grind setting, and operating conditions. Recheck after meaningful changes rather than assuming yesterday's programmed time remains exact.
Fiorenzato's F64 EVO PRO specifications identify dose adjustment in seconds. A display that allows fine time increments still measures time; it does not mean each basket is being weighed automatically.
What grind-by-weight controls
A weight-based grinder uses its weighing arrangement to guide delivery toward the target dose. The exact sensing, cutoff, calibration, and accessory requirements vary by model.
The Mazzer Mini g, for example, offers weight-based dosing and load-cell recalibration. Its published dose-accuracy claim is separate from the finer resolution described for its scale. A display's number of decimal places is not a guarantee that every delivered dose is accurate to that last digit.
Ask for the expected performance under the intended conditions of use, and verify it with the actual coffee and portafilter. Don't treat a manufacturer's qualified accuracy claim as an unconditional result on any counter.
Dial-in still belongs to the recipe
Basket dose is only one variable. Staff still need to set grind size, beverage yield, and the other recipe controls, then evaluate the espresso.
A grinder can deliver the target mass consistently while the shot runs poorly or tastes unbalanced. Weight-based dosing does not measure whether puck preparation was correct or whether the beverage tastes as intended.
Train staff to identify which variable needs attention. Changing the dose target every time a shot behaves differently can make the recipe less stable, even with sophisticated equipment.

Test the actual portafilters
Bring the portafilters, baskets, and any dosing accessories you intend to use. Ask the supplier to demonstrate correct placement and any tare, calibration, or recognition procedure.
Check whether different basket configurations can be used smoothly and whether staff need to change a setting. Do not assume a holder or weighing system works identically with every portafilter.
Try the equipment in a representative position. A weighing system may include vibration-management features, but stable placement and correct setup still belong in the installation discussion. Ask what conditions the manual requires.
Compare a run of usable doses
Use the same coffee and intended dose for both candidates. Let the supplier set each system correctly, then observe a representative sequence within the operating instructions.
Record delivered mass, correction steps, spills, and the time until the basket is ready. Include a meaningful grind adjustment and check how each routine returns to the desired dose.
Set acceptance criteria appropriate to your recipe with the trainer or supplier. A small demonstration can identify handling problems, but it should not be presented as a statistically complete accuracy certification.
Calculate waste savings from measured behavior
Suppose a hypothetical café reduces average over-dosing by 0.4 gram across 180 daily doses. Over 26 operating days, that is 1.872 kilograms of coffee. At an assumed $24 per kilogram, the coffee cost difference is about $44.93 per month.
These invented values demonstrate a calculation, not a promised saving from grind-by-weight equipment. If the existing timed routine is already well controlled, the difference may be smaller. If the bar has substantial correction waste, it may be more useful to measure that category separately.
Include maintenance and purchase costs in the comparison. Avoid counting the same discarded coffee once as over-dosing and again as correction waste.
Value staff attention without inventing payroll savings
A workflow that removes repeated corrections can make service easier and give staff more attention for the next task. It may improve consistency between experienced and newer baristas.
That does not automatically reduce scheduled labor hours. If staffing stays the same, describe the benefit as reduced handling, easier training, or smoother service unless actual labor savings are demonstrated.
If the grinder is already operating hands-free while another task is completed, a faster or more automated cycle may produce less additional benefit than expected. Observe the whole bar.
Ask about calibration and service
Find out how staff recognize a weighing problem, which calibration steps they can perform, and when technical support is needed. Keep any required calibration accessories available.
Clarify whether the grinder can use an alternate mode during a weighing-system issue and what the manual permits. Don't assume an automatic fallback exists or that switching modes preserves the recipe without checks.
For a connected grinder-and-machine package, confirm the exact hardware and software compatibility. Weight-based dosing and connected grind adjustment are different features; one name does not establish that both are included.
Choose the level of control your bar needs
A well-run timed grinder can be a sensible, economical choice. A suitable grind-by-weight system can be worth the investment when dose correction and repeatability are important operating concerns.
