General Hardness (GH) in Coffee Water: Calcium, Magnesium, Extraction, and Scale

General hardness (GH) is a water-chemistry measure used to describe the concentration of hardness-forming ions—primarily calcium and magnesium. In coffee, GH matters because these minerals influence extraction and flavor, while calcium in particular can contribute to limescale when the rest of the water chemistry favors precipitation.

GH is not the same as alkalinity

General hardness is often confused with carbonate hardness, alkalinity, or TDS. They are related measurements, but they answer different questions. GH focuses mainly on calcium and magnesium. Alkalinity describes the water's acid-buffering capacity, usually dominated by bicarbonate in typical brewing water. TDS is a broad estimate of all dissolved material and does not identify which ions are present.

How calcium and magnesium affect coffee

Calcium and magnesium ions can interact with flavor-active compounds during brewing. In practical terms, mineral composition can change perceived extraction, acidity, sweetness, and clarity. More hardness is not automatically better: very hard water can mute flavor, create scale risk, and make equipment maintenance difficult, while extremely low-mineral water can produce flat or sharp-tasting coffee and may be unsuitable for some machines.

GH and espresso-machine scale

Scale risk depends on more than GH alone. Calcium concentration, alkalinity, pH, temperature, and concentration inside boilers all matter. That is why a hardness number should not be interpreted in isolation. A water-treatment plan for espresso equipment should consider the manufacturer's requirements and the complete water profile.

How GH is measured

GH may be reported as ppm or mg/L as CaCO3, degrees of hardness, or by drop-count aquarium-style tests. When comparing numbers, confirm the unit and what the test actually measures. A conductivity or TDS meter cannot directly tell you GH because it responds to many dissolved ions, not just calcium and magnesium.
