Pre-Brew on Espresso Machines

Pre-brew is a term some espresso-machine manufacturers use for an initial wetting sequence before the main extraction, often involving a short pump-on period followed by a pump-off pause. It overlaps with pre-infusion conceptually, but the hydraulic behavior can be different.

Pre-brew vs. pre-infusion

Pre-infusion broadly means wetting the espresso puck before full extraction pressure develops. A machine may accomplish that with line pressure, a restricted flow path, a lever chamber, a variable-speed pump, or another low-pressure system.

Pre-brew often refers more specifically to a programmed stop-start sequence: the pump runs briefly, stops for a soak period, then restarts for full brewing. During the pause, pressure can fall substantially depending on the machine.

What the pause does

The first water causes the coffee bed to absorb water, swell, and begin releasing gas. A pause can give moisture more time to spread through the puck before full flow resumes. This may help some coffees or puck-preparation styles, but it is not automatically better for every espresso.

Variables that matter

  • How long the pump runs initially
  • How much water reaches the puck
  • Whether pressure is retained or vented during the pause
  • The pause duration
  • Coffee freshness, roast level, dose, basket, and grind

Because machine designs differ, two settings both labeled “5-second pre-brew” may create very different puck conditions.

How to evaluate it

Change pre-brew only after the basic dose, yield, and grind are reasonably dialed in. Compare taste and shot repeatability rather than relying only on visual flow. Long pauses can sometimes reduce temperature or create an unnecessarily long shot, while too much initial water can begin meaningful extraction before the main phase.
