Espresso Machine Pump Pressure

Pump pressure is the hydraulic pressure created by an espresso machine's pump in the brew circuit. It is often discussed as though it were identical to pressure at the coffee puck, but gauge location, flow, restrictions, and puck resistance can make those values different.

Vibration and rotary pumps

Vibration pumps can generate high pressure when flow is restricted, so many machines use an overpressure valve (OPV) to limit the maximum brew-circuit pressure. Rotary vane pumps used in many commercial machines are commonly adjusted at the pump bypass and can provide high flow with relatively stable pressure.

Blind-basket pressure vs. brewing pressure

A blind basket blocks flow almost completely. This is useful for checking a machine's pressure limit, but coffee is not a blind basket. During an actual shot, water is flowing through a porous puck whose resistance changes as the coffee wets, swells, dissolves, and erodes.

Therefore a machine reading roughly 9 bar against a blind basket may show a somewhat different pressure while brewing. On flow-control and profiling machines, changing flow deliberately changes how pressure develops against puck resistance.

Static and dynamic pressure

Static pressure is measured with little or no flow. Dynamic pressure is measured while water moves through the system. When diagnosing a machine, always note the test condition rather than comparing numbers that were measured differently.

When pressure looks wrong

Very low pressure can result from low puck resistance, pump wear, supply problems, leaks, bypass adjustment, or a faulty gauge. Excessive pressure may reflect OPV or pump adjustment, a blockage, or an inappropriate test condition.

Do not change pump or OPV settings simply to force one preferred number. Confirm manufacturer specifications and diagnose flow, grind, dose, and gauge location first.
