Commercial Espresso Machines: Groups, Boilers, Duty Cycle, and Workflow

A commercial espresso machine is designed to produce espresso and steam milk repeatedly under the workload of a café, restaurant, mobile bar, bakery, or other professional setting. The defining difference is not simply machine size. Commercial equipment is built around duty cycle, recovery speed, workflow, serviceability, electrical requirements, and the ability to maintain stable performance across many drinks.

Group count and bar capacity

The number of groups determines how many portafilters can brew at the same time. One-group machines save counter space and power but limit simultaneous espresso production. Two-group machines are the most common café format because two baristas can work more easily and several shots can be prepared at once. Three- and four-group machines are aimed at very high-volume bars where peak throughput justifies the extra footprint and electrical load.

Boiler configuration

Commercial machines may use heat-exchanger, multi-boiler, or other architectures. The important operational questions are how well the machine maintains brew temperature, how quickly it recovers after repeated shots, and whether the steam system can keep up with milk-drink demand.

Volumetric dosing and workflow

Many commercial machines provide programmable volumetric brew buttons so the barista can start a shot and work on another task while the machine meters the brew water. Semi-automatic paddle or button systems give the barista more direct control. Neither approach guarantees better espresso; the best choice depends on staffing, training, beverage volume, and the desired workflow.

Rotary pumps, plumbing, and drainage

Full-size commercial espresso machines are commonly plumbed directly to a treated water supply and use a rotary pump. Direct plumbing avoids refilling a reservoir during service and supports automatic boiler filling. A drain connection is also typical because drip trays can collect substantial water during rinsing and cleaning.

Power, recovery, and installation

Commercial machines may require 208/240-volt circuits and substantial amperage. Before purchase, confirm voltage, phase, breaker size, plug or hardwire requirements, water supply, drain location, counter dimensions, and local code requirements. A machine that physically fits but lacks adequate electrical service can be unusable.

Serviceability matters

Commercial machines need regular cleaning and periodic replacement of wear items such as group gaskets, screens, valves, and pump components. Access to parts, technical documentation, and qualified service should be considered before the machine is installed.
