Coffee Strength Explained: TDS, Concentration, Brew Ratio, and Why Strong Is Not the Same as Bitter

Coffee strength is the concentration of dissolved coffee material in the finished beverage. In technical brewing language it is commonly expressed as total dissolved solids (TDS), usually as a percentage. Strength is different from extraction yield and different again from bitterness or roast intensity.

Strength vs. extraction

Strength asks, “How concentrated is the beverage?” Extraction yield asks, “What percentage of the dry coffee dose was dissolved into the beverage?” A small, concentrated espresso can be strong while extracting a normal percentage of the grounds. A large filter brew can have a lower TDS but a similar or higher extraction yield.

Exact TDS varies widely with recipe and style, so these are relative categories rather than mandatory targets.

What controls strength?

  • Coffee-to-water brew ratio
  • How much soluble material is extracted
  • Final beverage yield
  • Dilution after brewing
  • Retention of water in the grounds

Strong does not mean bitter

A concentrated coffee can be sweet and balanced, while a weak coffee can taste bitter if its flavor balance is poor. People often use “strong” informally to mean dark roasted, intense, bitter, or high in caffeine, but those are separate concepts.

Measuring strength

A coffee refractometer estimates beverage TDS from refractive index. Good sampling technique matters, especially with espresso, where suspended solids, crema, temperature, and incomplete mixing can distort readings.
