Facing in Coffee Roasting
Facing is a roast defect characterized by a relatively broad, dark scorched area on one face of a coffee bean. It is generally associated with excessive conductive heat transfer when a bean remains in contact with an overly hot roasting surface.
Facing vs. tipping and scorching
Roasting-defect vocabulary overlaps, but the location of the damage is useful. Tipping appears at the pointed ends of beans. Facing is a larger burned-looking patch across a flatter face. Scorching is often used more broadly for localized surface burning caused by excessive heat intensity.
Why facing happens
In a drum roaster, beans receive heat through convection from hot air, conduction from the drum and other beans, and radiation from hot surfaces. Facing becomes more likely when conductive surface temperature is too aggressive relative to bean movement and batch conditions.
Potential contributors include a very hot drum at charge, insufficient bean movement, a batch size that does not match the roaster, inappropriate drum speed, or excessive burner input early in the roast. The exact cause depends on roaster design.
How it affects flavor
Severe facing can contribute harsh roast bitterness, burnt or smoky notes, and reduced sweetness. Minor marks do not guarantee the whole batch will taste defective, so visual inspection should be combined with cupping.
Prevention is roaster-specific
Reducing facing does not mean simply lowering charge temperature on every roaster. A lower charge can create other problems if it removes too much energy. Instead, examine the complete system: batch size, preheat routine, drum speed, gas or power input, airflow, and how quickly beans are moving away from hot metal surfaces.
Use defect patterns diagnostically
If facing appears repeatedly on the same coffee and roast profile, compare when the damage is developing. Changes in green-coffee density, moisture, screen size, and batch mass can alter how much heat the coffee can absorb safely. Roasters should change one variable at a time and confirm the result through both visual inspection and taste.
