Coffee Density Sorting
Density sorting is the separation of coffee based on differences in density so lighter, immature, damaged, hollow, or otherwise undesirable seeds can be removed from denser coffee. It is one of several quality-control steps that can occur during coffee processing and dry milling.
Why density varies in coffee
Coffee seed density is influenced by variety, elevation, maturation, moisture, defects, insect damage, processing, and storage. Density is not a perfect quality score, but unusually light material can be associated with underdeveloped or physically defective coffee.
Common density-sorting methods
Flotation: In some wet-processing workflows, cherries or parchment are placed in water so lower-density material floats while denser material sinks.
Gravity tables: Dry mills commonly use vibrating, inclined surfaces with controlled airflow to separate coffee according to density and movement.
Air classification: Airflow can help remove very light material, husk, dust, and other debris.
Density sorting is only one quality step
Good coffee preparation can also include screen-size grading, optical color sorting, hand sorting, defect removal, moisture checks, and lot-specific cupping. A dense seed can still taste poor, and a lower-density coffee is not automatically defective.
Why roasters care about density
Density can affect how coffee responds to heat. Very dense green coffee and lower-density coffee may require different energy application to achieve even development without scorching or underdevelopment. That does not mean roasters should sort every coffee themselves; density sorting usually happens at origin or the dry mill before export.
Traceability and lot separation
High-quality lots may be separated repeatedly through processing so defects are removed without losing the identity of the lot. This is part of the work that turns harvested cherries into stable green coffee suitable for specialty roasting.
