Coffee Degassing After Roasting

Degassing is the release of gases—especially carbon dioxide—from roasted coffee after roasting. Roasting creates and traps gas inside the porous bean structure, and that gas gradually escapes over hours, days, and weeks.

Why freshly roasted coffee contains so much CO₂

During roasting, coffee undergoes major chemical and physical changes. Beans expand, become porous, and generate carbon dioxide and other gases. Some gas leaves during roasting, but a meaningful amount remains trapped after the coffee cools.

Degassing is not the same as staling

Fresh coffee loses CO₂ while also undergoing oxidation and other aging processes, but these are not identical phenomena. A coffee can be too gassy for stable espresso extraction while still being extremely fresh and aromatic. Conversely, old coffee can contain little gas but also have lost much of its desirable aroma.

How degassing affects espresso

Very fresh coffee can produce abundant crema and may behave less predictably in the puck because rapidly escaping gas can interfere with wetting and flow. Many coffees become easier to dial in after some rest. The ideal interval depends on roast level, bean density, packaging, storage, and recipe.

How degassing affects filter brewing

In pour-over, fresh grounds often swell visibly during the bloom as CO₂ escapes. Blooming helps displace gas so brew water can contact the grounds more evenly. A large bloom does not automatically mean better coffee; it mainly indicates that substantial gas is being released.

Roast level and degassing

Darker roasts are generally more porous and often release gas faster, while dense light roasts can retain gas differently and may benefit from longer rest for certain espresso styles. There is no universal “best day” after roasting for every coffee.

Packaging and storage

One-way valve bags allow gas to leave while limiting outside air from entering. Airtight storage after the initial high-degassing period can slow aroma loss. Avoid repeatedly exposing coffee to warm air, moisture, and large temperature swings.
