Center Pour in Pour-Over Coffee
A center pour is a pour-over technique that directs most of the kettle stream into the middle region of the coffee bed rather than tracing wide circles all the way toward the filter wall. It can be used for an entire brew or mixed with smaller circular pours depending on the brewer and recipe.
What changes when you pour in the center?
Where water lands affects slurry movement. A narrow center pour tends to concentrate stream energy near the middle, while a wide circular pour distributes direct agitation over more of the bed. Neither is automatically superior; the useful choice depends on grind size, brewer geometry, pour height, flow rate, filter, and coffee.
Center pour and agitation
A high or fast center stream can penetrate deeply and create substantial local agitation even though the kettle is not moving much. A low, gentle center stream can do the opposite. “Center pour” therefore does not tell you the full agitation level without also describing pour rate and height.

Why some recipes avoid the filter wall
Pouring directly onto the paper above the coffee bed can allow more water to travel down the filter without interacting fully with the grounds. The amount depends strongly on brewer geometry and slurry level, but avoiding extreme wall pours is a common way to reduce uncontrolled bypass.
Can center pouring cause a crater?
Yes. A strong stream held in exactly one spot can dig into the bed and create a visible depression. That does not automatically mean the brew is ruined, but excessive localized agitation can move fines, alter permeability, and contribute to an uneven drawdown. Small circles around the center can spread the stream energy without reaching the filter wall.
A practical way to test it
Keep coffee dose, water, temperature, grind size, and total brew time similar. Brew one cup using broad controlled circles and another using mostly center-focused pouring. Taste for clarity, sweetness, dryness, and unevenness rather than judging only by the final bed appearance.

Center pour works differently in different brewers
A cone brewer, flat-bottom brewer, and steep-and-release brewer do not have the same bed geometry. Techniques should therefore be adapted rather than copied mechanically from one dripper to another.
