Can Cup Shape Change Coffee Flavor? Starbucks Tests Two Rims

Starbucks has introduced a tasting tool with two differently shaped sipping edges, one flared and one narrower, to demonstrate that the same coffee can be perceived differently depending on the rim. The company has not announced the cup for retail sale, but the idea behind it is useful well beyond a branded demonstration: cup geometry is part of the sensory system.

What Starbucks is demonstrating

Daily Coffee News reported on September 11, 2026, that Starbucks’ Sensory Shift Cup uses two rim profiles on one vessel. Starbucks says the flared side can emphasize brightness and perceived acidity, while the narrower side may produce a sweeter impression and fuller body.

That does not mean the cup changes the dissolved compounds in the beverage. It changes how the drink reaches the nose and mouth, how quickly it flows, which parts of the lips and tongue it contacts, and what the shape leads the drinker to expect. Perceived flavor is the combined result of taste, orthonasal and retronasal aroma, temperature, mouthfeel and context.

The research behind cup-shape effects

A frequently cited 2018 study by Fabiana Carvalho and Charles Spence tested 276 people at a specialty-coffee event in Brazil. Participants—both professionals and non-professionals—evaluated the same coffee from tulip, open and “split” cup designs.

The study, published in Food Quality and Preference, found that participants rated aroma as more intense in the tulip-shaped cup. Sweetness and acidity were rated more intense in the split-shaped cup. Cup shape also affected liking, and professionals did not respond exactly like amateur tasters.

This is evidence that vessel geometry can shift sensory judgments. It is not evidence for a universal rule that one rim always makes every coffee sweeter or another always makes it brighter. The result depends on the cup’s full shape, the coffee, serving temperature, drinking behavior and the taster.

Why the rim can matter

Aroma headspace

A cup with a narrower opening can retain and concentrate aromatic vapor differently from a wide, open bowl. A tulip-shaped vessel creates a larger chamber below a smaller opening, changing where volatile compounds collect and how they reach the nose. The effect is familiar in wine and spirits glassware, but hot coffee adds rapidly changing temperature and steam.

Flow and drinking angle

A flared rim can spread the liquid across a wider part of the mouth and may allow coffee to flow with less cup tilt. A narrower opening can direct a more concentrated stream and change how much the drinker tips the head. Those mechanical differences affect aroma release, tactile sensation and the pace of each sip.

Temperature

Wider cups usually expose more surface area, which can accelerate cooling. Cup mass, wall thickness and preheating also matter. Because sweetness, acidity, bitterness and aroma are perceived differently as coffee cools, an apparent “shape effect” may partly be a temperature effect unless the comparison is controlled.

Expectation

A rounded, heavy cup can suggest body and sweetness before the first sip. A thin, open cup may suggest delicacy or brightness. These visual and tactile cues are not fake; they are part of human perception. They can, however, bias a quality-control tasting when the goal is to judge the liquid alone.

What this means for home espresso

Try the same espresso in a traditional thick-walled demitasse and a thinner, more open cup. Keep the dose, yield and beverage split as even as possible. You may notice differences in temperature retention, aroma access, crema presentation and how concentrated the first sip feels.

For milk drinks, bowl shape also affects service. A wide cup provides more surface area for latte art but can cool faster. A tall, narrow cup changes the depth of the beverage and the way the milk and espresso meet during the pour. Choose cupware for the drink size and workflow first, then evaluate the sensory effect.

What café owners should take from it

Cupware should be treated as part of the recipe, not an interchangeable decoration. If a café dials in espresso in one cup and serves it in another, the customer may receive a meaningfully different experience even when the shot is technically identical.

  • Standardize each drink’s vessel. Record cup size and style on recipe cards, particularly when several vessels hold similar volumes.
  • Control temperature. Decide whether cups are preheated, room temperature or taken from a warming surface, then keep that practice consistent.
  • Check usable capacity. Nominal cup volume is not the same as the comfortable fill line needed for latte art, transport and clean presentation.
  • Test operational factors. Stackability, breakage, replacement supply, dishwasher fit and rim durability matter more during service than an interesting tasting result alone.
  • Retaste after changing cupware. A new cup may justify a small recipe or serving-temperature adjustment, but do not assume it does.

A simple two-cup test

Brew one batch of filter coffee or pull two closely matched espresso shots. Preheat two differently shaped cups, weigh equal beverage amounts into them and serve at the same time. Ask tasters to record aroma intensity, sweetness, acidity, bitterness, body and preference before discussing the cups.

Repeat the comparison with the cup identities hidden if possible. Then switch which physical cup receives each coded sample. The Starbucks cup is a demonstration, not a new law of extraction. It highlights a variable that coffee people often overlook because the cup arrives after grinding and brewing are complete. For home users, it is an easy experiment. For cafés and roasters, it is a reminder to keep cupware consistent during quality control and to evaluate the full customer experience before standardizing a vessel.
