Lighthouse is Sea State’s Costa Rican honey-process coffee, roasted medium-light. The roaster describes apple, honey, plum and prune notes with a satin-like body and bright plum-like acidity, a combination for drinkers who enjoy fruit character and a smooth texture.

What honey processing contributes
Honey processing retains some coffee-fruit mucilage during drying; honey is not added as an ingredient. Here, the roaster’s apple and plum notes give a more useful buying reference than the process name alone. Try a paper-filter brew first if you want to assess fruit clarity, or immersion brewing if texture interests you most.
Brewing and storage
For filter brewing, 20 g coffee to 320 g water is a practical 1:16 starting point, rather than a tested recipe for this lot. Match grind to your brewer. If the cup is thin and sharp, try slightly finer; if it drains slowly and tastes drying, try slightly coarser.
