Espresso Puck Preparation: Dosing, Distribution, WDT, Tamping, and Headspace

Puck preparation is the sequence used to place, distribute, and compress ground coffee in an espresso basket before brewing. Its purpose is simple: create a repeatable coffee bed with reasonably uniform density and no obvious low-resistance paths.

1. Use a repeatable dose

Choose a dose appropriate for the basket rather than forcing every coffee into the same gram weight. Roast level and bean density change how much physical volume a dose occupies. Weighing the dose removes one major source of shot-to-shot variation.

2. Distribute the grounds

Direct-to-portafilter grinders may create a mound or small clumps. Light tapping, a dosing cup, a blind shaker, or WDT can redistribute grounds. WDT uses thin needles to break clumps and move coffee through the basket before tamping. The goal is uniformity—not maximum stirring.

3. Settle only if useful

A gentle vertical tap can lower the bed before tamping when grounds are very fluffy or a dosing funnel is used. Aggressive tapping can create density gradients, and tapping after tamping risks separating the puck from the basket wall.

4. Tamp level

Once the bed is compressed enough to be stable, dramatically more tamping force adds little practical benefit. A level tamp and consistent depth matter more than chasing a particular force number.

5. Check headspace

The prepared puck needs enough room for normal swelling and the machine's shower-screen geometry. Too little initial headspace can disturb the puck; excessive headspace can contribute to a wetter spent puck but is not automatically an extraction problem.

Keep the routine simple

If espresso tastes good and shots are repeatable, additional distribution tools may not improve anything. Change one major variable at a time and use taste, yield, time, and consistency to judge the result.
