Coffee Equipment Throughput: Grams per Second, Cups per Hour, Roaster Capacity, and Bottlenecks
Throughput is the amount of coffee, water, or finished beverage that equipment can process during a given period. In coffee, it can describe grinder speed in grams per second, beverage output in cups per hour, brewer batch capacity, or a roaster’s kilograms per hour.
Different equipment uses different throughput metrics

Rated throughput vs. practical throughput
A specification is often measured under controlled conditions. Real cafés lose time to dosing, tamping, milk steaming, cleaning, refilling, customer customization, grinder adjustment, and staff movement. A grinder that can physically grind 5 g/s will not necessarily deliver a completed espresso dose every four seconds all day.
The system is limited by its bottleneck
If an espresso machine can brew four shots at once but the grinder cannot keep up, grinder throughput limits service. If the grinder is extremely fast but milk steaming takes too long, steam capacity becomes the bottleneck. The same principle applies in roasting: nominal batch size means little without considering roast duration, between-batch recovery, loading, cooling, and packaging.
Peak demand matters more than averages
A café serving 300 drinks over ten hours may still need substantial capacity if 100 of those drinks arrive during a concentrated morning rush. Equipment planning should focus on realistic peak windows and drink mix rather than dividing daily volume evenly across opening hours.
Reliability is part of usable throughput
Equipment that overheats, clogs, requires frequent cooling periods, or needs constant intervention has lower practical throughput than its headline specification suggests. Duty cycle and serviceability therefore belong in capacity planning.
