An Espresso Blend That Won as Drip Coffee

Thanksgiving Coffee originally developed The Upsetter as an espresso blend. It later won a 2019 Good Food Award in a blind evaluation as brewed coffee, demonstrating the blend’s range beyond the espresso machine. Its name honors Jamaican producer Lee “Scratch” Perry, whose inventive remixing parallels the idea of combining distinct coffees into a coherent whole.

What to Expect in the Cup

Nicaragua supplies nutty sweetness, Congo contributes spice, and Ethiopia brings the fruit. A balanced extraction should let those parts appear in sequence rather than collapsing into generic roast flavor. If espresso seems sharp, extend the yield slightly; if filter coffee tastes hollow, grind finer.

Brewing Recommendations

  • Espresso: start around a 1:2.2 ratio and evaluate sweetness before shortening the shot.
  • Pour-over: use 1:16 with controlled agitation for separation between fruit and spice.
  • Automatic drip: begin near 60 grams per liter.
  • French press: use a coarse grind around 1:15 for more body and blended flavor.

Use these recipes as starting points. Water chemistry, coffee age, grinder geometry and brewer design all affect extraction. Keep dose and water constant while changing grind size so each adjustment gives useful feedback.

Whole Bean and Ground Options

Whole bean offers the most control and generally protects aroma longer. Choose a ground option only when it matches the brewer named in the selector. Pre-ground espresso cannot be matched perfectly to every basket, dose and machine, so whole bean is preferable when precise dialing is important.
