Fresh light-roast coffee can release enough gas to disrupt flow, so allow a reasonable degassing period and use a longer bloom during the first days after roasting. Keep the bag sealed and store it away from heat and light. When dialing in, record dose, beverage yield and total contact time. Those measurements are more useful than trying to reproduce another brewer's grind setting by appearance alone.
