Fitzroy’s is one of Zoka Coffee Company’s original blends and remains one of the roaster’s most popular coffees. It is the lightest of Zoka’s dark roasts, offering milk-chocolate and sweet-molasses notes with a smooth, medium-bodied structure rather than an aggressively smoky finish.

What Fitzroy’s Tastes Like

Milk chocolate forms the center of the cup, while molasses contributes a darker, caramelized sweetness. The roast provides depth without pushing the coffee into the heavily carbonized character of a very dark French roast. That balance makes Fitzroy’s useful as an everyday drip coffee and especially well suited to cold brew.

If a hot brew tastes thin or sour, grind finer or extend contact time. If it becomes dry, bitter or hollow, grind coarser, shorten the brew or reduce water temperature slightly. Adjust one variable at a time so the result is repeatable.

Brewing Recommendations

  • Automatic drip: Start with about 60 grams of coffee per liter of water and a medium grind.
  • French press: Use a coarse grind near a 1:15 ratio, steep about four minutes and decant after pressing.
  • Cold brew: Use a coarse grind for a concentrated immersion brew, then dilute with water or milk to taste.
  • Espresso: Begin near a 1:2 brew ratio. Whole bean is preferable because espresso baskets require precise grind adjustment.

These are starting recipes. Water chemistry, coffee age, grinder geometry and brewer design all affect extraction. Keep dose and water consistent while adjusting grind size.

Whole Bean, Grind and Storage

Choose whole bean for the greatest control and longest aroma retention. Select a ground option only when it matches your brewer. Keep the bag sealed in a cool, dry cabinet away from sunlight, heat, moisture and strong odors. For larger bags, dividing coffee into smaller airtight portions reduces repeated exposure to air.
