A Tropical, Clean Natural Profile

Smallholder collection gives the station access to cherries from many nearby farms, while centralized sorting and drying create a consistent processing framework. The resulting lot combines regional character with the careful handling needed for a high-scoring natural coffee.

How the Natural Process Works

Incoming cherries are hand-sorted, then floated in water to separate them further by density. Selected cherries are rinsed and spread on raised drying beds in layers approximately five centimeters thick. The station team turns them five to six times each day to keep sun exposure and drying even.

Drying continues for roughly 15 to 21 days until the cherry pods reach about 11% to 12% moisture. The dried coffee then moves to a nearby warehouse for homogenization and storage before milling. This slow, closely managed approach helps develop the abundant fruit expected from a natural process while maintaining a cleaner finish.

Roast and Rest Information

The light roast recorded approximately 11.3% weight loss from green coffee measured at 9.7% moisture. Recorded LeBrew color readings were about 72.9 whole bean and 118.9 ground, with higher numbers indicating a lighter color. Measurements document the target profile and can vary modestly between batches.

Allow approximately 10 to 15 days for pour-over and two to three weeks for espresso. Early brews were reported as muted, with the coffee opening noticeably after about day ten. Rest is therefore part of the recipe, not merely a storage detail.

How to Brew Ethiopia Gedeb Huke

Pour-over

Start at 1:16 with a medium-fine grind, an even bloom and controlled pours. Use clean, balanced water and avoid chasing the total brew time before tasting. If the cup is sour and thin, grind finer; if it is drying or bitter, grind coarser.

Automatic drip

Use around 60 grams per liter and a medium grind. This approach can produce a fuller berry cup while preserving the refreshing lemonade finish.

Espresso

Wait through the recommended rest period, then begin near a 1:2.2 ratio. Longer ratios often make tropical fruit easier to distinguish; shorter shots concentrate body and berry sweetness. Expect this coffee to demand finer, careful adjustments.

Immersion and cold brew

French press can emphasize body and berry character. Cold brew will likely lean toward sweet tropical fruit but may soften the acidity that makes the hot cup so lively.

Whole bean is recommended for maximum aroma and control. Drip, coarse and espresso-ground formats are available when they match your brewer. Pre-ground espresso cannot be tuned to every basket and machine, so whole bean is preferable for espresso whenever possible.
