This coffee, like our others, is straight up legit stuff.

This roast is for our brothers and sisters in green. Many of us have spent years living on the line that separates our country and our neighbor to the south, Mexico. Whether you have spent a year or a couple decades on this border, this coffee’s for you. It’s a strange world. We’ve seen some interesting things, probably been cussed out, made hard decisions, and sacrificed much. At the same time, we’ve had fun too. You know you have. Our role is a little different than that of normal police. It’s what keeps things exciting. I’m proud to have worked with you, to be one of you, and to call you all brothers.

And don’t think you’re off the hook if you’re not working on “The Line”. Get some of this delicious coffee, brew it up and enjoy. While you do, remember, there are guys and gals on duty at all times, doing everything they can to make a difference.

Mexico just happens to produce some high quality, great tasting coffee. It seemed fitting to use some of their coffee beans for our Borderline Roast. This particular coffee comes from Chiapas Mexico, as always a focus on quality and flavor.

We get these beans from Cafe Imports.  Below is what they say about the CESMACH Co-op and their relationship with them:

Cafe Imports has sourced coffee beans from the CESMACH cooperative since the mid 2010s.  The cup quality on these has been solid year after year. Both of these commercialize their coffee through a third party, allowing them to do what they do best—produce solid coffee. There is no reason why this area can't produce great coffee! They have all the conditions such as heirloom coffee varieties (Bourbon, Typica), great altitude (1200–1750masl), and passionate coffee growers who want to produce high-quality lots. The location is extremely close to the Guatemala border and Huehuetenango.

CESMACH has nearly 500 active members and has been managed by Sixto Bonilla for the duration of our relationship so far. Sixto is very quality-focused and driven to empower his cooperative community with the tools and resources to produce better quality. We have collaborated with Sixto on several projects, and look forward to working closely with him in the future as well.

The farms of both CESMACH and the FTV are located in the buffer zone of El Triunfo Biosphere Reserve, which is in the highlands of the Sierra Madre. it is one of the most diverse forest reserve areas in the world and contains Mesoamerica's largest cloud forest, as well as a protected natural environment for thousands of plant and animal species. All of the coffee produced here is shade-grown.

Note about water hardness

Using hard water will ruin your espresso machine. Soft water no higher than 50ppm is required to keep your espresso machine running for the long term. Using hard water will void the warranty.
