Baratza History: Grinder Design & Breville

Baratza’s history centers on dedicated coffee grinders for home and specialty-coffee use. Its range includes different burr formats, adjustment systems and dosing methods, so the story is not a straight progression in which every newer model replaces every older one.

1999: a dedicated grinder business

Breville’s acquisition announcement identifies Baratza as established in 1999 and names Kyra Kennedy as its CEO and co-founder at the time of the transaction. The document describes a business designing and marketing grinders for North America and international markets.

That focus matters because grinding is a separate part of the coffee recipe. A grinder’s role is not simply to make beans smaller: it must let the user select and repeat a setting suitable for a brewing method.

Different model families solve different problems

The current Baratza range includes Encore, Virtuoso, Sette, Vario and Forté families. Similar names can conceal important differences. The original Encore and Encore ESP are not interchangeable specifications, and a weight-dosing model should not be confused with a timer-based version.

• Encore versus Encore ESP: verify the espresso adjustment range and burr arrangement of the exact model. A grinder that works well for filter coffee may lack the small adjustment steps wanted for a particular espresso recipe.
• Sette: the family uses a distinctive conical-burr layout. Do not describe it as a horizontal flat-burr grinder.
• Vario and Forté: inspect the exact burr set and dosing system. Steel and ceramic burr options should not be treated as one identical cutting geometry with a different label.

Timed dosing, weight dosing and grind adjustment

A timer controls motor-running time. A weighing system measures output mass. Grind adjustment changes the working gap and resulting coffee particles. These are separate controls: getting the same dose does not guarantee the same extraction if the grind is wrong.

Repair support as part of ownership

Baratza’s site provides parts, manuals and support routes. That is useful when a worn or damaged component can be replaced instead of discarding an entire grinder. It is not a promise that every repair will be free or that every discontinued part will remain available indefinitely.

Before disassembly, identify the model and follow its approved procedure. Unplug the grinder before accessing burrs, keep prohibited liquids out of the mechanism and avoid modifications that lack model-specific instructions. For performance problems, check cleanliness and correct seating before assuming a motor or burr replacement is necessary.

2 October 2020: Breville acquisition

Breville announced that it completed the acquisition of 100% of Baratza effective 2 October 2020 AEST. The stated consideration was approximately US$60 million, combining cash and shares. That is a transaction value, not Baratza’s annual revenue.
