Retention and exchange
Retention is coffee left inside the grinder; exchange is old coffee displaced into a later dose. A low advertised retention number does not guarantee zero exchange, and bellows can move fines as well as fresh grounds. Test by weighing input and output over several doses and tasting after a setting or coffee change.
Freshness
A hopper does not automatically ruin coffee. Light, heat, oxygen, hopper size, and how quickly the beans are used all matter. In a busy café, beans may turn over quickly. At home, load only what you expect to use soon and keep the remaining coffee sealed away from heat and sunlight.
Consistency
Single dosing depends on accurate weighing and a grinder that feeds predictably at varying load. Hopper grinders can dose quickly, but timed output may change with bean level, grind setting, and coffee properties. Gravimetric models weigh the dose but still need calibration and cleaning.
