The Gallatin R HX is quite the machine, especially considering the quality, features, and performance vs. its price. This thing definitely punches up, knocking out high-priced machines in its class or higher.
The PID ensures more precise temperature control (no major fluctuations), and the rotary pump is much quieter than I was expecting. The shot timer is, of course, an added bonus (since you don't need to mess with a timer on a scale), but you do need to account for any pre-infusion time in the overall shot time it seems, which is fine as long as you are aware of that.
Heat-up time is definitely less than 30 minutes, maybe more like 15-20 minutes or possibly even less at times. I have mine connected to a smart outlet and a SwitchBot to automate the start-up process in the morning; there is an Eco mode that basically puts the machine into a low-power state if you are so inclined.
The machine is just impressive to look at also. The walnut accents are classy, and they feel smooth and classy, too. The steam/hot water joysticks can be used in any direction, and you can either give gentle pressure on the stick, or toggle it completely to hold the position open. The steam wand works very well; milk frothing is as expected, and you can brew & steam at the same time if needed.
I have not yet started to experiment with the flow-control valve, but it, too, has a lovely walnut handle. With the handle turned all the way to the right, you are at full flow, and then from there it decreases the flow as you turn to the left. I will need to explore this function more as time allows!
Overall, this is a wonderful, beautiful machine, especially at this price-point, and I don't think anyone would be disappointed with all of these features and the build-quality for its price. Well done, Turin & EO!
