End of Shift / Off-Duty Checklist for Drive-Thru Only Coffee Stand

This checklist ensures that the drive-thru coffee stand is properly closed and ready for the next shift. Please check off each task as it’s completed.


1. Cleaning Tasks

  • Wipe down all counters: Clean and sanitize all work surfaces, including espresso machines, preparation areas, and counters.
  • Clean espresso machine: Backflush and clean the espresso machine, wipe down steam wands, and empty drip trays.
  • Empty and clean grinders: Remove any remaining coffee beans and wipe down grinders.
  • Wipe and sanitize milk frothers: Clean the steam wand thoroughly, and soak or sanitize frother parts if needed.
  • Clean sinks: Ensure all sinks are cleaned, and any equipment used is washed and dried.
  • Empty trash bins: Remove all trash and replace liners, ensuring trash cans are clean and not overflowing.
  • Sweep and mop floors: Sweep and mop all floor areas, including behind counters, under the machines, and the main drive-thru area.
  • Clean customer window: Wipe down the drive-thru window and any areas that customers may come into contact with.

2. Inventory & Stocking

  • Restock coffee beans: Refill grinders with fresh beans and ensure backup supplies are ready for the next shift.
  • Restock milk, syrups, and toppings: Ensure all milk, syrups, and toppings are refilled and available for use.
  • Check and restock cups, lids, and straws: Ensure an adequate supply of cups, lids, straws, napkins, and other packaging materials.
  • Check and restock to-go items: Make sure any extra items like condiments, stirrers, and to-go utensils are stocked.

3. Equipment Checks

  • Turn off equipment: Power down any machines not in use overnight (e.g., blenders, coffee brewers, etc.).
  • Check for equipment issues: Make sure all machines and tools are functioning properly. Report any maintenance needs.
  • Check refrigeration units: Ensure all fridges and freezers are working properly, and close them securely after restocking.

4. Cash Handling & Financials

  • Close cash register: Count the cash drawer and balance it with the sales report. Note any discrepancies.
  • Deposit cash: Secure cash according to store procedures and prepare for bank deposit if needed.
  • Record credit card and digital payments: Ensure all electronic payments are properly recorded.
  • Review sales report: Check the sales report and verify all transactions are accurate.

5. General Tasks

  • Secure doors and windows: Lock all doors, windows, and the drive-thru area before leaving the premises.
  • Check stock levels for the next shift: Make a note of any low inventory items that need to be ordered or restocked for the next shift.
  • Turn off lights: Ensure all unnecessary lights are turned off, except for those that need to remain on overnight for safety.
  • Check the drive-thru lane: Ensure the drive-thru area is clean and free of debris, and any signage is in good condition.

6. Final Walkthrough

  • Final check: Do a final walkthrough of the entire stand to ensure everything is cleaned, stocked, and ready for the next day.
  • Report any issues: Note any issues or problems encountered during the shift and communicate them to management.
