La Pavoni Lever Espresso Machine
La Pavoni lever machines use hot, pressurized boilers and exposed hot metal. Let the machine cool, unplug it, and release pressure before maintenance. Use the manual for the exact model and production year because group sizes and parts changed.
After each use
- Remove the puck and rinse the basket and portafilter.
- Wipe coffee from the group seal after the group is cool enough to approach safely.
- Purge the steam wand immediately after milk use, then wipe it with a damp cloth.
- Empty and rinse the drip tray.
- Leave the machine in the state specified by its manual; never open the boiler cap while hot or pressurized.
Weekly checks
- Wash removable baskets and portafilter with an approved coffee cleaner, keeping wood or plated parts out if the cleaner forbids immersion.
- Inspect the group, sight glass, boiler cap, steam valve, base and cord for leakage or damage.
- Check lever movement only when the machine is cool; do not force a stiff lever.
- Clean the exterior with a soft damp cloth and dry it.
Do not backflush a classic lever group
Classic La Pavoni manual lever groups do not use a pump-driven three-way solenoid system and should not be backflushed like an E61 pump machine. Rinse and clean using the model manual’s procedure.
Water and scale
Scale can form in stainless, brass, copper, and plated components when unsuitable water is heated. Use water within La Pavoni’s specification and test hardness and alkalinity. Distilled or aggressive reverse-osmosis water may also be unsuitable unless remineralized to the machine maker’s requirements.

Descaling
Do not descale on a calendar or use a random acid concentration. Base the decision on water, inspection, performance, and the manufacturer procedure. Improper chemistry can damage finishes, seals, heating elements, and plated parts.
